Mike, you have a great eye and surely know what you want in regard to composition. At your level I would simply recommend the same as John above: taking a ton of shots of each fish with different focal ranges, angles, light-angle, reflection, close-up, horizontal and vertical. In other words, Machine-Gun photography to get a blanket of shots and then pick and choose later. That will increase your odds in the heat of battle.
BTW, I like that shot of the fish in the net shot low on the horizon with a telephoto lens. It’s different!

For the the type of fishing and species you will be targeting, I would recommend any of the Enrico Puglisi In-Shore/Off-Shore flies. The Bunker series comes to mind or the floating minnow. For $20 U.S. you can sign up on his site to gain access to the tutorial videos on how to tie them properly. Here is a link to fly selections http://epflies.com/flies/in-shore-off-shore.html.
I would also recommend Simon Graham’s site Pike Fly Fishing Articles http://pikeflyfishingarticles.blogspot.com/. He has a lot of fantastic patterns with good descriptions. Although it is focused on the Pike and heavily influenced by Northern European tying styles, there is bound to be a pattern or two that work for your needs.
Carter Nelson’s Rubber-Legged Dragon is about the perfect “killer” bluegill fly. Black, Black/Chartreuse, and yellow are the best colors.

BTW, I did very little retouching on those clouds – most of that is out of camera with proper exposure for the highlights.
