I found this site while looking into some dutch oven cooking ideas for a fall hunting trip to South Dakota and a spring trip to the White with Uncle Dusty. Loads of good stuff so I thought i’d pass it along.

I’ve been learning from a buddy but I’m ready to go out on my own he lacks any adventure but I’ve learned a lot. The wife is reeeeally happy that I have another crap heavy hobby. At least this one keeps me at home. I have also been kicking around adding some basic items to the store any thoughts in that regard would be helpfull.

We have nearly 1500 miles in so far only had to toss out the old standard ” if I have to stop this car…” one time to halt a brotherly brawl in the far back seat where they new my arm wouldn’t reach.
The wife did get a little tired of listening to the pod casts but she did admit some were interesting. The boys want to do a barf boat trip if the waves ever lay down there is always someone chumming on those things.

It’s 1300 miles from the north coast of Ohio to our place in Fort Lauderdale and I’m feeling the need to make a trip to Captain Tony’s.

Not to worry Mr. Montgomery thanks to Shannon At Texasflycaster.com I have the music portion taken care of. I was however considering a Rosetta Stone course so that I can understand you when your in a Newcastle stupor, But they haven’t worked up a Texasfrench version as of yet.

Thanks for all the suggestions guys we will be pulling out at 3am tomorrow.

It’s kind of amazing how many guys here have similar interests.
Jason, I have been following the Ted talks for a couple of years now but I think I will save the econ stuff for another  trip though.

Eric, I’m not that far from you if you need a taste tester on that first batch
http://www.homebrewtalk.com is the web site I visit the most on brewing. I need to get the smoker done so I can start on my brewing system. I took welding classes last winter with the brew rack in mind.

A casting DVD that comes with an accompanying i-pod download to remind me of things I forgot from the house to the water.

Nice stuff Tyler my UDS is just about complete. When I was in Oklahoma this spring Dusty introduced me to ranch style beans, now my favorite.

You really can’t speed up the cooking time on a pork butt the idea is low and slow. It’s a tough piece of meat and you want one with plenty of cap fat and marbling. You have to

Great food shots. I’m going to have to give the ABT’s another try my first batch was disappointing.
Dusty, I have done the beer can chicken both ways, and the aluminum holder that I have is much easier I rotate the bird a 1/4 turn every 1/2 hour and it is much easier with the base plate on the holder. I’ll fix one this weekend and post some pictures.
I don’t need another hobby but Beer making would seem a natural extension is anyone into that.

Heat in a smoker that uses lump or wood is controlled by the amount of airflow you allow from the bottom up the more fresh air the more heat. The drum smoker I’m building uses a ball valve below the charcoal basket and holes drilled in the lid adjusting the valve and covering the holes with large ball bearings you call hold a constant temp for a very long time.
My first job was in the local butcher shop we prepped the hogs for a lot of summer parties I would always volunteer to make the deliveries.

Dusty, The “EGG” is a combo grill/smoker that has a strong following of users. They look like a green egg and the larger the cooking surface the larger the egg.
After Dusty’s recommendation I have developed a liking for Newcastle  myself. Chad that may be a Newcastle bottle with the neck label removed for discretion.
This weekend it’s a Fatty with Moink balls… pictures will follow.

That unit is a Bradley it is a set and forget model, but you can still have a few beers and pretend to be doing something. I have never tried anything else. We use a trailer model to do chickens and the UDS should be ready for use in another week after I get done welding on it.
