Well… It’s taken me a few years, but I finally landed a decent size rainbow. I typically release the trout I catch, but I decided to smoke this one and it turned out great.
Jalapeno pimento cheese and smoked trout.

The recipe was simple, I picked up some crackers and Jalapeno pimento cheese at the store and smoked that sucker. I did brine the trout for a few hours first.
