Photoshop Elements 7 showed up underneath the tree this year.
Have a look at the URL’s listed below. These should help. Also, while I don’t have PSE 7, if you click on the Help tab, they should have some tutorials both in there and on the CD you loaded the software from. Finally, check out the Adobe site as the usually have something too. Good Luck and congrats on your gift.

My wife, who can’t work out how to use bullets in MS Word, is a PS pro now.
She got a tutor, yip, someone came round to your house once a week for 10 weeks, he is going to be coming back this year, for a follow up.
She also did a PS course at a local collage, but that help sweet fanny adams… $500 for absolutely nothing, the tutor was about $15 a session, with a minimum of 10 lessons.
The tutor, was a youngster, who did PS at university, and was working in a design house, trying to get some work experience, but needed the extra cash… I am sure you can find one near you…

There are several videos on youtube, and maybe this can help for a specific question, but otherwise the youtube videos don’t seem to present a coherent set of lessons.
Check your local bookstore for instructional books, especially ones with a video guide included. IMHO, it is 1000% easier to learn if there is a video.
I have tried a class at the local photography resource (http://www.lightfactory.org, a great place to visit if you are ever in Charlotte) and then struck a deal with the instructor to provide private lessons. (I was a c student in class, at best).
My new approach for learning CS4 will be to use videos from http://www.photoshopcafe.com and then get the same professional photographer to help me with specific issues.
